Basically our favorite food place to get food from in Minot. The Blue Elephant. It's conveniently the Thai food truck on base, and it's so good! We get the same thing every time. Chicken Pad Thai, medium spice, and Chicken Fried Rice. YUM! Everything (at least the non sushi stuff) is $8.00, no tax. Portions are generous, and it's always delicious. Word on the street is that they are opening up a restaurant in town in October, so hopefully they keep the food truck too. :)
